Ingredients:

  • 4 sea bream fillets
  • Salt and pepper
  • Olive oil
  • 8 oz (225 g) pasta
  • 1/2 cup basil pesto
  • 2 tablespoons lemon juice
  • 1/4 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • Fresh basil leaves, for garnish

Instructions:

  1. Start by cooking the pasta according to package instructions. Reserve 1/2 cup of the pasta water.
  2. Season the sea bream fillets with salt and pepper.
  3. In a large pan, heat a little bit of olive oil over medium-high heat.
  4. Add the sea bream fillets to the pan and cook for 3 to 4 minutes on each side, until crispy and golden brown.
  5. Remove the sea bream fillets from the pan and set aside.
  6. In the same pan, combine the basil pesto, lemon juice, heavy cream, and parmesan cheese.
  7. Cook over low heat until heated through, about 3 to 5 minutes.
  8. Drain the pasta and add it to the pan with the sauce.
  9. Toss to combine, adding a little of the reserved pasta water if the sauce is too thick.
  10. Serve the pasta with the sea bream fillets on top, garnished with fresh basil leaves. Enjoy!
