Ingredients:
- 4 sea bream fillets, scaled and boned
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 1 lemon, sliced
For the Salsa Verde:
- 1 cup fresh parsley leaves
- 1/2 cup fresh basil leaves
- 1/4 cup fresh mint leaves
- 2 garlic cloves, minced
- 2 anchovy fillets
- 2 tablespoons capers
- 1 tablespoon Dijon mustard
- 1/4 cup red vinegar
- 1/2 cup olive oil
Instructions:
- Preheat oven to 400°F (200°C).
- Season the sea bream fillets with salt and pepper.
- Heat 2 tablespoons of olive oil in a large oven-safe pan over medium-high heat.
- Place the sea bream fillets in the pan skin-side down and cook for 3 to 4 minutes, or until the skin is crispy and golden brown.
- Flip the fillets and cook for another 2 minutes.
- Transfer the pan to the oven and roast for 8 to 10 minutes, or until the fish is cooked through.
- While the fish is cooking, prepare the Salsa Verde by combining the parsley, basil, mint, garlic, anchovy fillets, capers, Dijon mustard, and red vinegar in a food processor.
- Pulse until finely chopped.
- With the food processor running, slowly drizzle in the olive oil until the salsa is smooth and well combined.
- Serve the roasted seabream fillets with lemon slices and Salsa Verde on the side. Enjoy!
