Ingredients:
- 4 sea bream fillets
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons curry powder
- 1 can of coconut milk
- 2 ripe tomatoes, chopped
- Salt and pepper to taste
- A handful of fresh cilantro leaves, chopped (optional)
- 2 tablespoons of oil for frying
Instructions:
- In a large pan, heat the oil over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.
- Add the garlic and ginger and cook for another 2 minutes.
- Stir in the curry powder and cook for 1 minute, until fragrant.
- Add the chopped tomatoes and cook until they have broken down, about 5 minutes.
